Slimmers' Salad In No Oil Dressing


Ingredients:
1 bunch Iceberg lettuce
2 Oranges
1 medium sized Onion (peel)
Fresh mint leaves a few sprigs
10-12 Peppercorns
1 tsp Sea salt
1 tsp Mustard seeds
4 cloves Garlic
3 tbsps Lemon juice
2 tsps Malt vinegar
2 medium sized Apples (1 inch cubes)
1/4 small sized Water melon (optional, deseeded 1 inch cubes)
1 medium sized Carrot (1 inch cubes)
1 medium sized Cucumber (deseeded 1 inch cubes)
2 medium sized Tomatoes (deseeded 1 inch cubes)
1 stalk Celery (1 inch cubes)
1 medium sized Capsicum (deseeded 1 inch cubes)
2 Spring onions (1 inch long piec
Method:
Wash lettuce, tear into bite-sized pieces and keep in ice-cold water to remain crisp. Peel orange, separate segments and de-seed them. Cut them into half. Cut onion into quarters and separate the layers. Reserve some mint leaves for garnishing and chop the remaining. Crush peppercorns, sea salt, mustard seeds and garlic with lemon juice in a mortar with a pestle. Mix malt vinegar. In a bowl, mix all the fruits, vegetables and chopped mint leaves. Add the dressing and toss well. Serve the salad on a bed of crisp lettuce, garnished with reserved mint leaves.
